Besitzer und Chefkoch Baldur \u00d6xdal Halld\u00f3rsson lernte sein Handwerk am Culinary Institute of America in New York und sp\u00e4ter als Patissier an der renommierten Richemond-Schule in Luzern, wo er seine gro\u00dfe Liebe f\u00fcr Schokolade und feine Desserts professionalisierte.<br \/>\nNach seiner Ausbildung im Ausland kehrte Baldur nach Island zur\u00fcck und revolutionierte die isl\u00e4ndische K\u00fcche. Baldur verwendet ausschlie\u00dflich wild gefangenen Fisch und Meeresfr\u00fcchte, sowie Wildbret und Lamm aus kr\u00e4uterreichen Hochlandregionen. Nur bei ihm kann man exotische Kreationen wie gegrilltes Rentier und Kormoran mit Blaubeer-Aquavitsauce probieren, oder Seesaibling mit Kokosnu\u00dfsauce. Er ist seiner Zunft an Ideen stets einen Schritt voraus, und so gibt es auch bei seinen Desserts immer etwas Neues und Aufregendes zu entdecken, wie etwa eine Schokoladenmousse mit Erdbeersauce, St\u00fcckchen von der Wassermelone und wei\u00dfem Schokoladenschaum, oder sein Mandelkuchen mit Rhabarber, Blaubeeren, Kr\u00e4henbeeren und isl\u00e4ndischer Skyrmousse.<\/p>\n<h5><strong>Leidenschaft f\u00fcr Frische<\/strong><\/h5>\n<p>Als Verfechter von gutem Essen besteht Baldur auf frischesten Zutaten \u2013 und er hat Gl\u00fcck, denn er sitzt mitten in Islands \u201eGew\u00e4chshausg\u00fcrtel\u201c, wo er sich Obst und Gem\u00fcse nach Gusto aussuchen kann, ohne weit fahren zu m\u00fcssen. Es gibt auch einen kleinen K\u00fcchengarten am Restaurant, hier wachsen Kerbel, Rhabarber und Johannisbeeren sozusagen geradewegs frisch zur Verarbeitung in die K\u00fcche hinein. Lamm und Wild kommen aus Nordostisland und sind bekannt f\u00fcr ihren urspr\u00fcnglichen Geschmack.
